Sunday Dinner: 1 Pot Lasagna Soup
One of my go-to, actually quick, actually easy and so delicious dishes
So, I love a one pot anything. You hear me?! Love and live for them! Especially as a busy mommy of a five and fourteen year old, I just don’t have a ton of energy on reserve. It’s typically always used up.
So making lasagna from scratch is just not really a thing I’m gonna do on a regular basis, although it would be beautiful if my life was set up that way! Italian food and me go together real bad.
This one pot lasagna soup has changed the game. And trust me on this: it’s really, really, really tasty (or at least mine is). LOL! I’m gonna share the recipe I use and then give you my couple of tidbits.
I use this recipe by Carlsbad Cravings.
It’s honestly super easy and quick, y’all. OMG. Now I want some, but I planned and shopped for Zuppa Toscana this week; not lasagna. Anyway.
My tips:
Use RAO’s for your sauce (unless you make your own, which defeats the purpose of a one pot situation, but more power to ya!)
Save your cheese to sprinkle on fresh at the very end (like once it’s served in the bowl) .
I add the heavy cream, and just… YES. Chef’s kiss.
I am also led by the voices of the ancestors when I cook. I cannot say I stuck by each suggested measurement in the recipe, especially seasoning. Tap in.
Be sure to break your lasagna noodles into about 2 inch pieces.
That’s it. It’s honestly so easy. And SO, freakin’ good!
